If you wondered where Terry Katong Laksa is after the move of Bukit Timah Food Centre, you are not alone.
This underrated laksa stall used to operate at both Bukit Timah and Chinatown Food Centre.
Unfortunately, I was told Terry suffered a stroke a while back. We certainly wish him a steady and peaceful recovery.
Today, the legacy continues at Amoy Street Food Centre under the watchful care of his son, often greeting regulars with a genuine smile.
The stall proudly displays its commitment to a cleaner recipe, notably omitting MSG, sugar, and evaporated milk from the preparation.
You may find the flavour profile lighter compared to the typical creamy and heavy bowls found elsewhere.
A standard bowl costs $5, with a larger version available for $6.50.
Following the traditional Katong style, the thick rice vermicelli arrives pre-cut into short strands. This allows diners to enjoy the entire meal using only a spoon, which is a convenient feature for a quick lunch.
The prawns were fresh and provided some sweet, bouncy contrast to the savoury gravy.
The cockles, aka hum, were plump and added a briny depth that many laksa fans look for. Slices of fish cake and bean sprouts complete the bowl.
Indeed, I found the gravy slightly thin and lighter in consistency, which felt less oily on the palate.
Also, the spice level remained relatively mild, allowing the natural aroma of the laksa leaves and dried shrimp to take centre stage.
I definitely recommend adding a piece of otah ($1.70 ala carte), grilled beforehand and served in banana leaves.
While they are often at room temperature when served, dipping them into the hot laksa broth warms them up and lets the fish paste soak up the spicy gravy.
