Alexandra Village Food Centre is often associated with avocado shakes and claypot laksa, but it also houses a hae mee heritage gem.
The Old Stall Hokkien Street Famous Prawn Mee carries a legacy that began as a pushcart business in 1943.
That long lineage is now split across two branches, one at Hong Lim Market & Food Centre run by the older generation (their parents), and one at Alexandra Village Food Centre run by fourth-generation hawkers.
The name itself is a tribute to its origins at Hokkien Street, where the original prawn noodle business began.
The soul of their prawn noodles lies in the broth, prepared by boiling pork bones, prawn shells, and dried scallops for at least three hours.
This basic recipe has stayed essentially the same over the years.
That slow extraction results in a hae mee soup that feels light and clean, while carrying a natural, briny sweetness.
Its menu is comprehensive and allows for various combinations of toppings.
Options include Prawn Noodles ($6, $9), Pork Ribs Noodle with Prawns ($6, $9), Pig Tail Noodle with Prawns ($6, $9), and the Pork Ribs Pig Tail Prawn Noodle ($8, $10).
Premium choices feature the Big Prawns Noodle ($12), and you can also add a portion of pig skin ($1) to any bowl.
The most distinctive feature of the stall is the signature chilli powder, which the hawkers prepare by frying dried prawns with a specific blend of chillies.
Unlike the oily sambal pastes found elsewhere, this dry and gritty powder provides a savoury depth that heightens the sweetness of the prawns.
For that reason, I usually opt for the Pork Ribs Noodle with Prawns in the dry version because it is pretty shiok.
The noodles are tossed thoroughly in this spicy mixture, creating a fragrant coating that delivers a gradual heat with every mouthful.
The prawns were fresh, while the pork ribs were tender and pulled away easily from the bone.
I found the accompanying bowl of soup tasty as well, as the subtle notes of the dried scallops lingered long after the first sip.
