[Fukuoka] Do you know why Fukuoka is famous for mentaiko?

This savoury and slightly spicy cod roe was introduced to Japan via Fukuoka by a Korean immigrant after World War II, and it quickly became a local favourite.

Today, it’s a key ingredient in many of the region’s dishes and snacks, including the iconic Mentaiko Baguette.

One place to try the famed Mentaiko Baguette is The Full Full Hakata フルフル博多 bakery.

It is located near Canal City Hakata.

You can’t miss the bakery, thanks to its eye-catching exterior and a giant mentaiko baguette model above the entrance. Very quirky.

Stepping inside, I saw shelves lined with a variety of bread and pastries.

There was a bit of everything, from sweet melon bread to savoury cheese-filled rolls.

If you are not sure what to pick, the five best sellers include the Hakata Mentaiko French Bread, Chestnut and Macadamia Bread, Crusty Melon Bread with Hazelnut Flavour, Eight Kinds of Vegetable Spice Curry Bread, and Garlic France Bread.

Of course, the Mentaiko Baguette is the star, freshly made in store. It was a joy watching the server cut up the loaf with a loud ccccrrrrunch sound.

When I took a bite, I could understand why it is so well-loved. The crust was alluringly-crisp and golden, while the inside was warm and chewy.

The mentaiko filling was savoury, and just a bit spicy, balancing out the buttery softness.

It was a little oily, though, so don’t be surprised if your hands or the paper bag pick up some of it.

With that said, I think it’s best to sit down and enjoy the bread fresh. The crispness was memorable, and waiting too long to eat it might affect the taste.

The bakery does get busy, and popular items can sell out quickly, so coming earlier in the day is a good idea.
