Cavan Road at Jalan Besar has always been interesting on the food front, with some little shops such as Rya Bakehouse, iBUNGKUS Nasi Lemak, and Partage Patisserie.
Partage Patisserie, a micro-patisserie at Cavan Suites, is quite easy to miss if you are walking past too quickly.
The shop is run by pastry chef Terence Lin, whose journey started with the home-based Butter Cube SG while he was juggling pastry school and internships.
He later represented Singapore as part of the winning team at the Global Pastry Chef Challenge 2022 in Abu Dhabi, where he worked alongside pastry chef Dexter Lee.
Partage Patisserie is really small, with a glass pastry display, compact counter and only a handful of seats, so this is more of a takeaway shop.
The focus is on French-style petit gateaux and viennoiserie, with creations such as Matcha Blossom, Rocher, Coffee Tart and Mango Jasmine alongside croissants, Pain au Chocolat and other changing bakes.
The petit gateaux are priced at $9 each, with sets of two at $17 and four at $32.
The Matcha Blossom ($9) was the one that immediately caught my eye, dressed almost like a little green flower with fresh strawberry on top.
While the exterior was finished with matcha cream and a hazelnut element for texture, cutting through the cake revealed layers of vanilla sponge and vanilla crémeux with strawberry compote.
What mattered more was that it tasted as good as it looked, because some pretty cakes can occasionally photograph better than they eat. This was one I genuinely enjoyed.
The other cakes looked equally well-made, including the chocolate-rich Rocher layered with chocolate mousse, 70% chocolate crémeux, chocolate sponge and a crunchy hazelnut base.
There was also the Mango Jasmine, which went in a lighter direction with jasmine-infused cream and mango passion compote over sponge and a crisp tart shell.
Of course, I couldn’t leave without having a Shio Pan.
It appeared as a plain golden roll with a scattering of salt on top, but this was buttery, soft and delicious.
Terence clearly has the technical background to produce intricate competition-level pastry, and you can always have a short chat with him to find out more about his passion.
