Another ex-Din Tai Fung chef opened a hawker stall? Again?

At this point, I feel like “ex-Din Tai Fung chef” is becoming its own hawker genre in Singapore. Fried rice, pork chop, noodles, the works. But to be fair, if the food is good, I am not complaining.

Though this time, it is not fried rice, but kolo mee.

Three Bowls 来三碗 is located at Whampoa Makan Place, and chef-owner Robin serves East Malaysian-style kolo mee, with bowls starting from $4.90.

On the menu are Home Taste Kolo Mee ($4.90 / $5.90), Pork Chop Kolo Mee ($6.90), Chicken Chop Kolo Mee ($6.90), Fish Roll Fish Ball Mee ($4.50), and Wanton Kolo Mee ($4.50).

Most items come in dry or soup versions, and for the dry noodles, there are white and black sauce options.

I went straight for the Pork Chop Kolo Mee ($6.90), because once the Din Tai Fung connection is mentioned, the pork chop becomes almost impossible to ignore.

The bowl came with springy noodles, minced pork and slices of fried pork chop laid across the top.

The pork chop was easily the more memorable part of the bowl. It had that familiar savoury seasoning, with a light five-spice fragrance and some crispness around the edges.

More importantly, the meat was not dry, and the slices were thick enough to make the bowl feel quite substantial.

The noodles had a springy bite, though the white sauce version was slightly lighter than I expected.

It was more about lard fragrance and minced pork than a strong sauce, so this may not be the bowl for those who want their kolo mee very aromatic or heavily seasoned.

I also ordered a Mixed Soup ($6) which came with fishballs, Fuzhou meatballs, dumplings and greens.

The soup itself was light and comforting, while the dumplings had soft skins with a simple meaty filling.

I would probably return to try the black sauce version next time, just to see whether it gives the noodles more depth.

For now, the pork chop is the reason I would remember Three Bowls more than the kolo mee itself.
