Fried Carrot Cake decisions are usually quite personal.

Some people are firmly Team White, some swear by the black version, and I just order both (like a yuan-yang version) if the stall allows.

At Ghim Moh Carrot Cake, I usually end up choosing both versions which are of entirely different styles.

There are three stalls in a row at Ghim Moh Food Centre I tend to rotate between, depending on mood, queue length, and how many calories I can afford for that meal.

After Lao Chao Zhou 老潮州 and Jiu Jiang Shao La 九江燒臘, the third one is Ghim Moh Carrot Cake at #01-16.

(Oh yes, some of my older food photos were taken at its former ABC Food Centre branch run by the son, which I used to visit as well.)

The stall is known for both Black and White Carrot Cake ($3.50, $4.50, $5.50), still affordably priced for all the effort.

At a time when even hawker meals can creep up in price, I do appreciate hawkers who still keep a $3.50 option on the menu.

The white version, fried up by Auntie Gek Choo (玉珠姐), features soft radish cake pieces fried with egg into neat and crisp rectangular blocks, plus some browned edges when the wok works its magic.

The black version prepared by her husband at the back of the stall gives that punch.

The dark sweet sauce coats the carrot cake pieces, adding a deeper savoury sweetness that works well with the egg and chye poh.

It is messier, darker, and not exactly elegant on the plate, but that is also why it is quite satisfying.

I also like how the black version has more contrast. You get soft pieces of carrot cake, bits of egg, slightly charred edges, and that salty sweet hit from the preserved radish.

The chilli helps, especially when mixed into the darker sauce.

With the black version, it blends into the whole plate better and gives it a small kick without taking over.

If you cannot decide between the two, opting for a mixed yuan-yang plate gives you the best of both worlds.
