One of Japan’s most sought-after food concepts, Hikiniku to Come (挽肉と米), has finally its debut in Singapore at VivoCity.

The restaurant has achieved a cult-like status in Tokyo, and the Singapore outlet marks another milestone following their successful expansions into Taipei, Hong Kong, and Bangkok.

(Oh yah, not to be confused with a similar concept of Niku Niku Oh!! Kome found at WEAVE and Westgate.)

If you have visited their Shibuya or Kichijoji branches, you would know that this isn’t your usual Singapore Japanese restaurant.

The menu is famously singular with no long lists, and no side distractions.

It serves just one thing: hamburger steak and rice. The name itself translates literally to ‘Minced Meat and Rice’, and the kitchen operates with a focus on those two elements.

Located on Level 1 of VivoCity (near HeyTea), the space mirrors the Japanese experience where diners are seated around a circular open kitchen.

When I dined in Tokyo, I thought that the experience was somewhat theatrical and quite worth the hype.

You sit at a counter facing the charcoal grill, watching the chefs shape and flame-grill the patties in a process that runs like a well-oiled machine.

The standard set priced at $27.90, revolves around three beef patties.

If you want extra patties (for more protein), they are available at $7.90 each.

Each patty is made from 100% freshly ground beef and served to you one by one so you can enjoy them at the peak of their temperature.

There are three ways to enjoy the hamburg: first on its own, then with sauces or condiments such as grated radish and ponzu vinegar, and finally with rice and egg as a comforting bowl.

I usually like starting plain first, just to taste the beef properly before adding everything else.

A variety of condiments are available at the counter to customise your bites. My favourite is the Special Tare Sauce, as it adds that savoury-sweet Japanese-style depth without overpowering the hamburg.

Just remember two things: give the patties your full attention and do not ignore the rice.

Queues are expected, of course.
