Buying cakes at Paparch feels a little like stepping into a boutique.
“This is sold out. That is also sold out. Consume within 5 hours.”
Except here, the models are square Basque cheesecakes lined up neatly like designer handbags, each with its own soft glow under the lights.
For many, the first encounter with Paparch came during the “Circuit Breaker” years (oh the memories!) when home bakers rose to fame and Instagram feeds were filled with molten cheesecake boxes that sold out within minutes.
Paparch was one of the names that stayed on long after the home baking rush slowed, and it now operates from a proper space at Arab Street.
The menu here remains focused, with the burnt cheesecake coming in flavours of original ($8.80), miso caramel, ondeh ondeh, chocolate praline, and pistachio berries ($9.80 for flavoured).
I ordered the Original Cheesecake ($8.80), the very item that built their name.
Opening the square blue box, it had a golden surface that carried a faint bitterness from the caramelisation.
First scoop with the wooden spoon, and it came with a soft, almost melty creaminess in the centre.
So molten, creamy and enjoyable.
I get the fuss now, even though my wallet was feeling a bit of a pinch. However, those who prefer a firmer style might find themselves wishing for a bit more intensity.
For the flavoured options, the filling stayed smooth, and the added ingredient gave only a light accent instead of stealing the show.
However, note that some of the popular ones like chocolate praline sell out early in the day.
