You know what they say about good food in Singapore… just follow the queue.
I had always noticed this rather generic-sounding prawn noodle stall tucked in Redhill 85 Food Centre, but I never actually managed to join the line till recently.
Every time I swung by, it was either shuttered or already sold out long before the official closing time.
Redhill Prawn Noodle 85红山蝦麵’s menu is simple, with Prawn Noodle ($4.50 or $5.00) with in dry or soup options. Yup, no fanciful top-ups.
Customers can choose from yellow noodles, thick bee hoon, kway teow, or mee pok. I went for the Dry Prawn Mee with mee pok and mee kia.
The noodles arrived neat, slicked with chilli oil and a sprinkle of fried shallots. The prawns came halved, shells mostly off, but the tail still clinging on.
The first bite tells you a lot. The mee pok came springy, just the right amount of bite, not clumped or mushy.
They carried a slightly sweet chilli that built up slowly with each mouthful. A spoonful of crunchy fried lard cubes took things up a notc
Prawns can make or break this dish. Here, they were fresh and slightly sweet. I could taste that light briny sweetness, nothing rubbery or bland.
The pork slices, though basic, were at least moderately tender.
The real test came with the soup on the side. Prawn mee soup can sometimes taste watered down. Not at 85 Redhill.
The broth here was cloudy, orange-brown, and packed with shellfish flavour. It tasted like it had been boiled with both prawn shells and pork bones for hours.
Redhill Prawn Noodle 85红山蝦麵 opens early, from about 5am till lunch or sold out.
Not a famous name (yet), but it had springy noodles, strong prawn soup, and value-for-money portion. Thank you to the queue for leading me here.
