You may wonder what Sin Huat Xuan 星發軒 sells. Since it does sound quite like a zi char eatery.
If I tell you its previous name was At The Myo at Everton Park, perhaps it would ring a bell?
Sin Huat Xuan can be found at Kampong Bahru Road, and serves pasta and Japanese-inspired rice dishes at affordable pricing.
The ‘new’ name actually comes from the owner’s grandfather, who set up a bicycle shop called Sin Huat in the good old days.
The chef’s journey has not been smooth. I remember he first started with a humble stall called Sebastian Mix Fusion Cuisine, then expanded into a small cafe known as At the Myo.
That space earned attention for playful fusion plates but did not survive the pandemic, weighed down by high rent and labour shortages.
After two years away, he is back with Sin Huat Xuan.

The pasta menu features Tom Yum Prawn ($15.60), Prawn and Clams with Spicy Broth ($15.60), Seafood Marinara ($18.00), Salmon Pink ($15.60), Beef Bolognese ($15.60), Beef Stroganoff ($15.60), K-style Chicken Cream ($13.50), Bacon Carbonara ($13.50) and Black Pepper Chicken ($13.50).
The Tom Yum Prawn Pasta ($15.60) is probably their most well-known dish.
The noodles were firm, and the sauce carried the tang and light heat (not too much) of tom yum with a creamy backbone.
On the rice side, the Cheese Katsu Curry Rice ($14.60) is its most recognisable dish (I remember having it during the “Sebastian Mix Fusion” days.)
The cheese is not outside, but inside the pieces.
Beneath the golden-crusted chicken cutlet lies gooey cheese, quietly expanding each bite into something indulgent without being messy.
While you may be thinking Japanese curry, that gravy actually draws from a Hainanese-style curry that is thick, lightly spiced, and robust.
Those looking for something lighter can check the cauliflower “rice” section, with Prawn Bisque Cauliflower Pao Fan Style ($16.00) and Korean Kimchi Bacon Fried Cauli-Rice ($14.60).
Sin Huat Xuan may not be a polished star in the dining scene, but it is a place with heart, perseverance, and a touch of fun on the plate.
From a family’s bicycle shop to a café serving tom yum spaghetti, the journey alone makes it worth a visit.
