Pasir Panjang Food Centre is known for several well-loved stalls.
These include Alan Banana Leaves BBQ Seafood, Ivy’s Hainanese Herbal Mutton Soup, Yusoff Haji Jalal Satay, Fatty Ipoh Noodles, and KS Fruit Rojak.
I chanced upon Mugiwara Tonkotsu Ramen while exploring Pasir Panjang Food Centre.
Mugiwara? Interesting. Could it be a reference to “One Piece”? ‘Mugiwara’ means ‘straw hat’.

This unassuming ramen stall operates for only a few hours each day, closed from Tuesday to Thursday.
Given the limited opening hours, catching them during the right time is essential, but it also adds a sense of exclusivity to the experience.
(Do check out Google for their latest opening hours.)
The ramen stall itself has a straightforward, no-frills setup, focusing solely on delivering a satisfying bowl of tonkotsu ramen.
Ordering is via a digital system displaying a minimal menu. The options are concise, centred around their signature dish of Tonkotsu Ramen.
Priced at $6.50, the ramen is very affordable considering the rich, complex flavours it offers.
You can also add extras like half an ajitama egg, dried nori, or spring onion for a small additional cost, which is great for those who enjoy customising their bowl.
Interestingly, instead of the usual cha siu slices that you might expect, I noted yakiniku-style pork strips on the top.
These aburi charred pieces add a tasty twist to the dish, giving it a slightly smoky flavour that blends well with the creamy broth.
As for the noodles, they lean towards the softer side. A firmer texture would provide a better contrast to the broth.
The broth, as expected from a tonkotsu base, is rich and creamy. It has a well-rounded depth, the kind that comes from hours of simmering pork bones, delivering a robust, slightly fatty flavour.
The ajitama egg (additional $0.70 for half) is a welcome addition, with its soft, jammy yolk.
Mugiwara Tonkotsu Ramen is a good option if you are in the area and craving a solid bowl of ramen.
It won’t necessarily stand out as the most groundbreaking ramen experience, but for its price point and location in a hawker setting, it certainly delivers on comfort and flavour.
