The popular SEORAE Korean Charcoal BBQ has opened a brand-new outlet at Level 2 of Compass One, Sengkang.

SEORAE Korean Charcoal BBQ is best known for using the authentic way of charcoal BBQ, special ‘circle grilling’ technique, and also their prized Galmaegisal (pork skirt meat).

Once exclusivity reserved for royalty, Galmaegisal is now a must-have cut at SEORAE.

In case you are wondering, the popularity of Galmaegisal lies in the notion that it resembles the much-revered wagyu beef in texture, taste, and look.

And only up to 250 grams are typically found between an adult pig’s liver and midriff. To further enhance the flavours, chefs at SEORAE ‘massage’ and marinate the meat in a tasty concoction of Korean spices before grilling it just right.

If you come with a group of friends or family, then it is more value-for-money to get the “Ultimate Sets” good for 2 to 3 diners.

Available are the Ultimate Mix Set ($98), Ultimate Pork Set ($88), and Ultimate Beef Set ($108).

Those who order the BBQ Sets can also enjoy free and refillable side dishes available at the banchan station.

So you can get your fill of Kimchi, Seasoned Bean Sprouts, Cucumber Kimchi, Korean Lettuce Salad, and Macaroni Potato Salad.

For a bigger group, there is the Mix King Set ($168) meant for 3 to 5 diners.

Included within are the Galmaegisal (pork skirt meat), Seorae Samgyeobsal (premium black pork belly), Woosamgyeob (US beef shortplate), LA Galbi (bone-in short ribs), Kkochi Platter, Haemul Pajeon, and Sundubu Jjigae – almost like a royal feast.

Galmaegisal (Signature US Pork Skirt)
Known as pork “skirt meat,” the cut has apparent density, a more noticeable reddish tint, and a robust meaty flavour, unlike other pork parts.

The result is a juicy piece of Galmaegisal that you can savour in traditional Korean fashion by dipping it in various spicy sauces.

Tip: Top up $2 for a round of cheese on grill, for a creamy hit to go along with the meats.

Seorae Samgyeobsal (Premium Black Pork Belly)
The premium chestnut pork belly is cut thick and arranged in an eye-catching circular presentation, instead of the usual side-by-side slices.

The thickness (about the size of your pinky finger) allows it to become so succulent when grilled that would be melt-in-your-mouth with a nice char.

Woosamgyeob (US Beef Shortplate)
The special marinade imparts a mild sweet and savoury taste in the meat. You do not need to cook this meat too long, so that this stays juicy and retains the moisture.

LA Galbi (Bone-in Short Ribs)
These bone-in short ribs are marinated overnight so that it is packed with flavour. After grilling, it has a sweetish tinge and a soft tender bite. One of my favourite meat cuts here.

Kkochi Platter
Inspired by the night markets of Korea, this street-food platter features skewered meats to be charcoal-grilled, such as Kimchi Pork Belly, Cheese Pork Belly, and Spicy Enoki Pork Belly.

Haemul Pajeon
Spring onion and seafood Korean-style Pancake this version included with as prawns and squid. The pancake here has a mildly crunchy exterior, but inside it is fluffy in texture.

Sundubu Jjigae
Spicy Korean stew with silken tofu that is velvety soft, accompanied with other ingredients like clams and minced pork, plus some enoki mushrooms and an egg yolk for a comforting finish.

There are a number of NEW dishes and items launched by Seorae, such as the ones below.

Pabulgogi ($19.90)
Bulgogi or “fire meat” typically consists of beef. However, the Pabulgogi that arrives on the table at Seorae comprises slices of moist pork collar enriched with the restaurant’s special onion sauce.

Famous for its marbling and one of the tenderest cuts, the pork collar exudes intense flavours when lightly grilled.

Complementing the meatiness of the pork, in this case, is sweetness from leeks and a hint of savoury earthiness from the accompanying king oyster mushrooms.

Wagyu Kkot Deungshim (Ribeye Steak) ($49.90)
The first thing about the Wagyu Kkot Deungshim one notices is the enticing marbling on the AUS ribeye steak.

The texture isn’t far behind, tender to a fault, and juicy when cooked just right.

Bossam ($28.90, limited quantities daily)
Available in limited qualities, the Bossam consists of taking black pork belly, having a chewy texture, and tenderising it by boiling the meat in a robust flavour-filled brine for over two hours.

The pork is served with a range of sour and spicy condiments such as garlic, kkakdugi – radish kimchi, green chillies, and thick ssamjang sauce.

The best way to enjoy Bossam is to take the meat, add your preferred condiments, wrap it up in a leaf and bite into a mouthful of savoury goodness.

Truffle Tteokbokki ($15.90)
Tteokbokki, translating to “stir-fried rice cake,” is one of Korea’s most famous street foods. Typically, the dish is a sweet but mostly spicy preparation with a chewy texture.

However, at Seorae, you can relish a slightly Western interpretation of the dish that, to an extent, replicates carbonara pasta.

Truffle Tteokbokki has moderate spice levels brought about by its creaminess. Moreover, the chefs infuse the rice cakes with truffle oil and zest to that distinct aroma.

As for the bacon bits on top, they work both as a crunchy element to offset the smoothness of the rice cakes and as a much-loved meaty garnish.
