In line with the auspicious phrase ”Nian Nian You Yu” 年年有余, Japanese F&B group RE&S is offering exciting choices of Yu Sheng topped with quality sashimi-grade fish slices.

Not just one, but six types of Yu Sheng with various fishes from Norwegian Salmon, Maguro (tuna), Kanpachi (amberjack), Chutoro (fatty tuna), to Tai (Japanese Sea Bream).

To usher in CNY 2022, its six concepts – Kuriya Dining, Kuriya Japanese Market, Ichiban Boshi, Ichiban Sushi, Sushi-GO, and Shimbashi Soba have launched a variety of Japanese-style Yu Sheng.

This ranges from the highly popular sashimi, vegetarian-friendly fruits, soba-topped, petite-sized (great for 1 to 2 pax), to luxe lobster YuSheng.

With 37 outlets island wide, you can find the most convenient venue for dine-in or takeaway.

Here’s more on the six Japanese-style Yu Sheng Offerings and Pen Cai:

Kuriya Dining – Premium YuSheng with Lobster, Snow Crab and Japanese Abalone
For luxe on your CNY dinner table, go for the Premium YuSheng at Kuriya Dining (from $198) which showcases fatty tuna, amberjack, sea bream and scallops.

Of course, I loved the addition of fatty tuna with its distinctive fat marbling, and rich-buttery melt-in-the-mouth texture.

That is not all. This auspicious dish also comes with top-grade ingredients like lobster, snow crab and Japanese abalone, to symbolise loads of ’huat’ when you toss for the New Year.

Topped with gold flecks to reflect richness and abundance, this dish is tailor-made for sashimi lovers, and will be a show-stopper at any CNY meal at home.

There are serving sizes for 2 pax ($198+/++), 3-4 pax ($258+/++) and 5-6 pax ($388+/++).

Shimbashi Soba – Soba YuSheng
At Shimbashi Soba, they offer Yu Sheng featuring handmade soba – with a combination of freshly-cooked soba and fried soba, made fresh daily by in-house chefs.

The fried soba includes some crunch which adds some textural contrast with the refreshing mix of vegetables.

Three YuSheng choices are available, including Take ($48.80+/++, for 2-3 pax), Matsu ($58.80+/++, for 3-5 pax), and Fuji ($68.80+/++, for 3-5 pax).

Order the Fuji YuSheng to enjoy some Kanpachi (Amberjack) specially air-flown from Japan. Kanpachi is a meaty fish boosting firm yet smooth texture, with a mild and sweet flavour and no fishiness.

This raw fish salad is also chockful of abalone, salmon, shredded cucumber, carrot, and white radish, accompanied with a house-made yuzu sauce.

Ichiban Boshi and Ichiban Sushi – Salmon Yuzu YuSheng
The best-selling Salmon Yuzu YuSheng boasts tantalising, thick slices of Norwegian salmon which is silky-smooth, thickly cut with fresh taste.

Available choices are Celebration YuSheng ($36.80++, for 2-3 pax dine-in only), Bountiful YuSheng ($50.80+/++, for 4-6 pax), and Auspicious YuSheng ($62.80+/++, for 8-10 pax).

If you would like to try something different from the usual sweet plum sauce for your YuSheng, then you will enjoy the house-special yuzu dressing made using ingredients from Japan.

I enjoyed it for its zest and refreshing tanginess, which lifted the taste of the cut vegetables.

Ichiban Boshi and Ichiban Sushi – 6 Treasures Fruits YuSheng
For a healthier lohei experience, this vibrantly colourful 6 Treasures Fruits YuSheng YuSheng ($58.80+) includes a refreshing medley of six types of fruits: pomelo, pear, guava, mango, pineapple and jackfruit.

My favourite was the mango which added a creamy, sweet-fruity taste; while the strong-flavoured jackfruit would have an element of surprise.

Kuriya Japanese Market – Abundance YuSheng
This year, Tai (Japanese Sea Bream) is added to Kuriya Japanese Market’s Abundance YuSheng ($60.80 nett) offerings.

Japanese Sea bream is a traditional fish that the Japanese eat to celebrate the New Year to usher in good luck, with firm-flesh white meat that is mild in flavour.

The Abundance YuSheng ($60.80) comes with Tai (8 pcs), Maguro Tuna (8 pcs) and Salmon sashimi (12 pcs) along with signature Yuzu sauce made with ingredients from Japan.

Sushi-GO – Petite Salmon YuSheng
If you are looking for something more for the individual or pair, this Petite Salmon YuSheng ($8.80+/++) is perfect for 1 to 2 pax.

See your YuSheng arrive via on ‘shinkasen train’ on the conveyor belt.

Have a casual lohei which comes with salmon, radish, carrot, pickled cucumber, pickled ginger, sweetened lime and pok chui – crispy crackers which symbolise ‘gold’, topped with sesame seeds and yuzu sauce.

Japanese Treasure Pot
This one-of-a-kind Japanese Treasure Pot aka Pen Cai ($199, for 4-5 pax) features premium ingredients including whole abalone, sashimi-grade scallops from Hokkaido, snow crab leg meat, prawn, and more in superior stock boiled for hours.

House-made Japanese chashu, homemade chicken roulade with cabbage and spinach, kamaboko fish cake and shiitake mushroom round out the bountiful ingredients.

There are even gold leaves which add a touch of sophistication.

You would find the stock quite different from the typical Chinese-style offering, with a lighter flavour and consistency, and thus not so rich and heavy.

The superior stock is boiled for hours using fresh ingredients, which you would find extra that would be best to pour over some fluffy rice for more comfort.
