The brand specialises in Yunnan ethnic highland cuisines (高原料理 gao yuan liao li). This type of cooking sources and uses fresh mountain ingredients from the Yunnan Province of China, where you can discover regional cooking nuances in China.

Their signature dish – the Steam Pot Chicken Soup, is prepared without even adding a drop of water. So apparently that’s how uniquely brewed this steam pot is, using a pressure-steaming technique for three hours on a special breed of black-feet chicken. The water found in the soup comes from the condensation of the steam alone.

Prepared in a special hand-made Jianshui claypot, this dish rewards you with a clear, delicate soup with a robust and nourishing flavour.

This is probably one of the best chicken soups I had in Singapore – light, flavourful, yet not greasy.

Mother’s Day Special
YUN NANS has created the Steam Pot Chicken Soup with Lily Bulb specially for the occasion. Not only that, it has also come up with a flower-themed menu of dishes.

Kam’s Roast uses top quality, free-range ducks for their signature dish of Kam’s Roast Duck ($63.25 for whole, $34.27 for half).

Roasted Cantonese style, the meat is marinated with Kam’s Roast time-honoured secret recipe. Meaty yet tender.

One of my favourite roasts from Kam’s Roast is the Toro Char Siu ($26.22). This is made with premium pork belly, seasoned with a secret marinate.

The recipe is handed down by Hardy Kam’s father, Mr Kinsen Kam Kwan Sing, who was the second-generation owner-chef at the famed Yung Kee.

Each slice of thick cut char siu contains alternating layers of meat with fats, with nicely charred skin.

Place a piece into your mouth, let those fatty juicy oil take a burst within, and experience the full immersion of flavours.

They are all soused in a premium golden broth made using a secret recipe which includes pork bones and chicken.

Soup Restaurant is known for its series of home-style Cantonese dishes and herbal soups created from family recipes.

One of their most iconic heritage dishes is the Samsui Ginger Chicken (from $24.90), a platter of chicken steamed with minimal seasoning dipped in a ginger and sesame oil sauce.

You can wrap the chicken in lettuce with sliced cucumbers for added freshness and crunch. It is also believed ginger and sesame oil have health benefits by removing excess “wind” from the body.

Penang Culture has introduced a Malacca Golden King Prawn Seafood Bee Hoon. This noodle dish actually originated from the historic state of Malacca. What makes this seafood noodle dish indulgent is the rich and thick gravy cooked with milk and cheese.

The thin bee hoon noodles are cooked and tossed in a medley of sweet and succulent King prawns, clams and squid.

Its savoury flavour complements the natural sweetness of the seafood to create this appetising and flavourful golden-yellow gravy.

Though Penang Culture’s rendition sounds potentially very cheesy (it is made with three types of cheeses: nacho cheese, gouda, and parmesan), I thought it captured the essence quite well – flavourful yet not overly rich.

Beauty in The Pot is known for its comforting hotpot with signature soup bases, including Signature Beauty Collagen Broth, Signature Spicy Nourishing Soup (Pork Bone Soup), Herbal Drunken Chicken Broth, Cooling Coconut Broth, Longevity Wild Pine Mushroom Broth (Vegetarian); and Vitamin C Tomato Sweet Corn Broth.

I would recommend the Signature Beauty Collagen Broth, which is a flavourful medley of conpoy, chicken, chicken feet, pork bone and pig’s trotters boiled for many hours.

It results in a broth that is rich in collagen and very tasty – good to go with many of the meat and seafood items.

For ingredients, get the Ebiko Prawn Paste shaped out of 100% prawn meat, added with ebiko which lends colour and crunch. After being shaped and cooked, the prawn meat has that delicious, succulent bite.

This is a new “seafood in a pack” concept in Singapore. While “HACK IT” is not the first here, but there are a few pointers what makes that difference – prices are considered pretty wallet-friendly, and this concept is by the famous JUMBO Group of Restaurants.

You will be having fresh seafood prepared with JUMBO’s specially created sauces with Southeast Asian flavours, sent right to your house (via order.hackitseafood.com.sg) or at The Riverwalk pop-up store.

Seafood are placed in bags, poured out ‘ceremoniously’ on tables, and diners eat straight from there with hands or gloves. Can be messy but fun.

HACK IT’s seafood packs have that extra edge because the seafood is wok-fried with sauce (wok-hei!) rather with sauces just mixed or tossed over boiled seafood.

Lè Fusion is a modern Chinese cuisine restaurant and bar in the hip Mohamed Sultan area, located near the iconic Singapore River.

They are known for their Crispy Pork Belly Mantou ($12 per portion of 2), of mini ‘sandwich’ made of soft mantou wedged with slow-roasted pork belly.

Yes, similar to the Taiwanese gua bao or Chinese kong bak bao, this contains crisp crackling skin and tender meat instead – inspired by Lechón aka suckling pig from The Philippines.

The pork belly is slow-roasted for a number of hours, resulting in a skin with a crunch, which contrasts beautifully with the fluffy bun.

The Egg Tarts from Joy Luck Teahouse are from Hoover Cake Shop 豪華餅店 in Hong Kong with two choices – one with a multi-layered puff pastry crust, the other “cookie” base akin to sweet shortbread crust.
