Every Mid-Autumn season, Hai Tien Lo (海天楼) at Pan Pacific Singapore keeps its popular Cantonese mooncake traditions familiar while introducing new flavours into the selection.
For 2026, Executive Chinese Chef Edden Yap and his culinary team turn towards herbal tea and floral notes, alongside the classic baked mooncakes that many still look forward to each year.
This year’s collection comes in a bright orange box decorated with delicate floral motifs.
With its sturdy frame, you can easily repurpose the box as a jewellery or watch organiser at home after polishing off the mooncakes.
If you are picking up a box for family, friends or clients, here are the key flavours from Hai Tien Lo to look out for this year.
Roselle with Wolfberries and White Lotus Paste Baked Mooncake ($95 nett per box of 4)
The new creation for 2026 brings a slightly different character to the familiar white lotus paste.
Dried roselle petals and wolfberries are folded directly into the filling, giving the mooncake a gentle tanginess that helps cut through the richness of the lotus paste.
There is also a light fruitiness running through each bite, while the small pieces of wolfberry provide a welcoming chewy bite and keep the texture from feeling too uniform.
If you want to try something new without straying too far from a traditional baked mooncake, this would be my top recommendation.
Mao Shan Wang Durian Snow Skin Mooncake ($108 nett per box of 4)
For durian lovers, the Mao Shan Wang Durian Snow Skin Mooncake is probably THE one to look out for.
The best-selling mooncake returns this year, wrapped in a charcoal-coloured skin finished with a light dusting of gold.
Slice through the soft exterior and you get a generous centre of Mao Shan Wang durian purée, fragrant, creamy and distinctly bittersweet.
This is naturally the most indulgent-tasting option in the collection, and one that is best kept properly chilled before serving.
Plus-point: Enjoy a complimentary insulated chiller bag to keep your snow skin treats perfectly chilled.
Hai Tien Lo No. 1 Tea Baked Mooncake ($95 nett per box of 4)
Tea drinkers may already be familiar with this Hai Tien Lo signature.
The mooncake uses the restaurant’s proprietary tea blend, bringing herbal and tea notes into the smooth filling rather than relying on a sweeter dessert style flavour.
What comes through is a deeper, slightly woodsy fragrance that helps temper the sweetness.
I would pair this with a freshly brewed pot of oolong or Chinese tea, which brings greater depth and balance to the mooncake’s flavour.
Double Yolk White Lotus Paste Baked Mooncake ($99 nett per box of 4)
For those who still prefer a traditional baked mooncake, the Double Yolk version keeps to the familiar combination of white lotus paste and salted egg yolk.
If you like mooncakes that don’t taste overly sweet, the lotus paste stays relatively low on sugar, letting the moist, savoury salted egg yolks provide a satisfying contrast.
There is also a Single Yolk White Lotus Paste Baked Mooncake ($95 nett per box of 4) for those who prefer a lighter proportion of salted egg yolk.
Gift Box Sets
For a more elaborate gift, the Premium Four Treasures Baked Mooncake Set ($188 nett) comes in an expanded two-tiered box with one of each baked mooncake flavour, together with an elegant teapot, two matching teacups and a tin containing two packets of Hai Tien Lo No. 1 Tea Leaves.
The Classic Four Treasures Baked Mooncake Set ($98 nett) consists of the same quartet of baked mooncakes, with the standard keepsake box doubling up as a pretty jewellery box after the festivities.
