Hung’s Delicacies is a name that commands immense respect among fans of Chiu Chow cuisine, known for their signature “Lo Shui” brine.

The story began in 2003 when Chef Ah Hung opened his first shop after an impressive career that included an apprenticeship at the legendary Yung Kee.

After famously earning a MICHELIN star at its original North Point location, it has now found a sleeker home at Causeway Bay in the basement of Tower 535 on Jaffe Road.

The Signature Marinated Goose is the primary reason for a visit. It is not cheap though, priced at HKD 288 for a sliced plate, HKD 468 for half a goose.

The meat is known to be exceptionally tender, having absorbed a complex blend of spices from a master brine that is both aromatic and deeply savoury.

Unlike many other versions, the flavour here is exceptionally clean and balanced, without being overly salty.

I suggest pairing it with their signature plum sauce, as the zesty acidity helps balance the depth of the poultry.

During the day, the Set Lunch (HKD 298 for two people) offers incredible value and a comprehensive look at the kitchen’s diverse skills.

I opted for Set A, which features the Garlic Chicken paired with Sesame Jellyfish alongside the Sweet and Sour Pork with Fresh Pineapple.

The chicken was wonderfully aromatic and tender, while the jellyfish provided a refreshing, snappy contrast.

The pork was equally delightful, coated in a bright glaze that carried the natural sweetness of the fruit.

Alternatively, Set B focuses on their heritage specialities, including a Marinated Goose Platter, Stir-fried Beef with Mixed Mushrooms and Sweet Peas, and Braised Mixed Vegetables with Fermented Red Bean curd.

Both sets are designed as a complete experience, served with a Home-style slow-cooked soup, blanched seasonal vegetables, steamed white rice, and a Daily house-made dessert soup to finish the meal.

They also sell bottles of their signature chilli sauce and X.O. sauce, which make for gifts for home cooks who want to recreate a bit of that “Hou Mei”, magic at home.
