Halal-certified specialty Chicken Rice stalls are still relatively uncommon in Singapore, and this search led me to Edmond Chicken Rice at Tanglin Halt Food Centre.
There is another stall at Telok Blangah Crescent Food Centre.
Being Halal-certified, it is a popular choice among the local community, and it is common to see the consistent queue that forms during the lunch period.
The stall was founded by Edmond Ho. One of his earlier jobs was cooking chicken rice in a Halal food court, which was where he gained experience before striking out on his own.
Edmond spent a significant amount of time developing his recipe to ensure the chicken remains moist while the rice stays flavourful without being too oily.
The menu is focused on value, with choices including the standard Chicken Rice ($5), Chicken Rice Set ($7), Drumstick Rice ($5.50), and Double Wing Rice ($5.50).
For larger groups, you can order a Whole Chicken ($38), Half Chicken ($19), or a Quarter Chicken ($13).
I tried the roasted chicken and found the meat to be well-prepared, with the skin carrying a light roasted aroma and the meat staying relatively tender.
Actually, my favourite part turned out to be the rice which had a subtle ginger and garlic fragrance. As for the texture of the grains, they were fluffy without being mushy.
The chilli was pretty shiok too, and provided a sharp, zesty heat that worked so well with the savoury meat. I actually went on to take a second helping.
They also serve noodle-based dishes such as Chicken Noodle ($5.00), Chicken Wanton Noodle ($5.00), and Chicken Wanton Soup ($5.00).
While most wanton noodle stalls include the usual char siew, the stall tops the noodles with slices of roast chicken instead. Can be a good choice for those who prefer more protein in their meal.
The noodles were springy and tossed in a savoury sauce, while the wantons were filled with a well-seasoned chicken mixture.
What truly elevated the noodles was the generous heap of crispy fried garlic on top.
Oh yes, if you are in a rush, you might need to factor in some extra time for the wait during peak lunch hours.
