$48 for two crabs? That is really a good deal.
Wok Master has opened at Paya Lebar Square (moved from City Square Mall). And this year, it is celebrating its 10th anniversary (congrats!) with more promos and new “chef recommended” dishes.
It is not like your usual coffeeshop zi char fare.
Instead, it takes the claypot-and-crab experience and places it in the comfort of a mall, air-con and all.
The menu is so wide, you may need a few minutes to really decide what to have. Not exaggerating.
It ranges from crabs, claypot specialities, curry fish head, zi char favourites, affordable rice sets, noodles, dim sum, to even Nanyang-style kopi (it is opened by the Coffee Hive team).
The interior of Wok Master at Paya Lebar Square is open and modern, set right in the middle of the mall’s atrium where natural light filters through.
Circular wooden beams with touches of greenery hang overhead, giving the space a casual but polished look.
While it has the vibe of a family-friendly restaurant, it still works for office lunches and casual gatherings.
At Wok Master, the crabs are the star.
The line-up covers Chilli Crab, Black Pepper Crab, Claypot Crab Tang Hoon, Claypot Crab Bee Hoon Soup, Creamy Salted Egg Crab, to Savoury Crab Meat Seafood Broth.
The sheer range means there is something for every taste, though it also makes choosing a small struggle.
Here are some of the recommended Wok Master signatures, including some new dishes you may not have tried before:
Crab Hoon Hoon Soup ($48 for 2 crabs promotional price)
The Crab Bee Hoon Soup looks simple but carries more flavour than expected.
The broth is naturally sweet from the crab, not overly seasoned, which lets that crab flavour stand out.
I kept on drinking the milky soup (which had a bit of hua diao wine), and thankfully the ginger cut through some of that heaviness.
After cracking through shells, it was so comforting to scoop up a spoonful of thick bee hoon and soup together.
Chilli Crab ($48 for 2 crabs promotional price)
This is Wok Master’s best-seller, and it’s easy to see why.
The sauce here is thick, slightly eggy, and leans sweet, but with enough tomato tang to keep it balanced. I found the spice very moderate, and not that fiery.
The real fun is with the mantou buns: crisp on the outside, fluffy inside, great for mopping up the sauce until the plate looks almost clean.
Creamy Salted Egg Crab ($48 for 2 crabs promotional price)
Ah, the indulgent one. The sauce is thick and grainy, salty and savoury at first bite, followed by a hint of sweetness from the evaporated milk.
As the crab meat is cooked quite a while in the sauce, it gives every piece that almost buttery flavour.
It is addictive, though it does get heavy if you eat too much on your own. Best shared across the table.
Signature Curry Fish Head ($32)
Okay, you cannot miss this. The Curry Fish Head at Wok Master lands on the table in a claypot, with the thick and aromatic gravy bubbling away.
The fish head is fresh, the flesh soft and easy to lift off the bone, with the cheeks and collar holding the most flavour.
The vegetables do not play second fiddle either. Eggplant, lady’s fingers and long beans ‘drink’ up the curry until they are almost bursting.
Of course my other favourite part is the fried beancurd puffs which soak up the gravy so completely they squirt when you bite into them. So satisfying.
Steamed Pork Belly with Preserved Vegetables ($18)
At first glance this looked heavy with fat, but hidden underneath were neatly stacked slices of pork belly. A surprise!
The meat was so tender, the fat melting away as the rich dark sauce sank into every layer.
Fragrant Crispy Mala Chicken Wings ($12)
These wings were fried to a satisfying crunch, then tossed with dried chillies and Sichuan peppercorns.
The mala powder gave that numbing spice that lingered on the tongue without overwhelming. Even as your lips tingle, you will find yourself reaching for another piece.
Golden Soup Prawn Cai Xin ($20)
The bright orange broth had a smooth, velvety sweetness that reminded me of pumpkin, gentle on the palate.
The prawns were fresh and springy, the cai xin tender, and together they made a dish that was light and surprisingly comforting.
Special Sauce Dory Fish ($12)
Good for sharing, especially for anyone who prefers fish without bones.
The dory was fried till crisp at the edges, then wok-tossed in a glossy sweet-sour sauce that clung to each piece. The result was sticky, tangy and dangerously easy to keep eating.
Seafood White Bee Hoon ($12.80)
The bai mi fen was soft but not mushy, soaking up the broth that carried the natural sweetness of prawns and fish.
A straightforward but comforting dish, especially when paired with heavier plates at the table.
