Many of my foodie friends have watched shows like Culinary Class Wars and Chef & My Fridge, and know that Chef Choi is known for his fusion dishes and not the type to play it safe in the kitchen.

You do not need a plane ticket to Korea now to try out his food with this unique collaboration.

“Memories on a Plate” will debut on 27 September 2025 at Bulgogi Syo Suntec City and Bugis Junction, and roll out on 30 September at VivoCity and The Woodleigh Mall.

Look out for four exclusive dishes, each rooted in Choi’s career-defining moments, reinterpreted through Bulgogi Syo’s fiery dining philosophy of experience, artistry and flavour.

Here’s what you can expect from Bulgogi Syo’s “Memories on a Plate”:

Fresh Omugi Beef Yukhoe Sotbap ($25.90)
Yukhoe, the Korean cousin of steak tartare, is not for everyone, but here it arrives refined and balanced. If you have not tried Yuhhoe before, you may want to start off with this rendition.

Chef Choi uses premium Australian barley-fed beef, seasoned lightly with spring onion.

Furthermore, the beef can be torched tableside, which deepens the aroma just enough without losing that bouncy raw texture.

Paired with fluffy sotbap rice, cooked in an iron pot until a golden crust forms at the bottom, the dish offers two experiences in one.

I found myself savouring the yukhoe alone first (to savour the more natural flavours), then mixed into the rice with the rest of the ingredients for a hearty, extra-comforting bowl.

Maeun Dwaeji Galbi Jjim with Triple-Cheese Risotto or Spicy Pork Stew ($25.90)
You get different components with this dish – the spicy pork, cheesy risotto served on a hot plate, banchan and soup.

The pork shoulder is slow-simmered in Chef Choi’s specially-created spicy sauce, with the gochugaru lending its signature smoky heat (but not too much).

The meat is tender and falls apart under the spoon, rich but not greasy, and the sauce is robust and flavourful, making you want to get some rice.

Except here, instead of rice, you get risotto.

Plus, you get a trio of mascarpone, mozzarella and Parmigiano-Reggiano torched on top which turns it into a cheesy cushion that tempers the spice. One of my favourites from this series.

Jang Trio with Omugi Beef Tenderloin ($39.90)
If you have watched Culinary Class Wars before, you know that Chef Choi has featured this in the show – the combination of three jangs of Korean cooking.

They are ganjang (soy sauce), doenjang (soybean paste) and gochujang (chili paste).

The beef is lightly marbled and barley-fed, and the meat cuts are served on a sizzling hotstone, so that you can cook it further to your preferred doneness.

The other star is the aged doenjang butter. As it melts over the slices on a personal hotstone, the aroma is so nutty, earthy, and faintly sweet.

Then, there’s the crisp soy-pickled radish with truffle on the side (and I recommend taking one together with the beef).

Another way? Dip into Bulgogi Syo’s homemade gochujang sauce and it all comes together: heat, sweetness and depth.

Vongole Sujebi ($21.90 for members only)
The final dish is reserved for Syo Rewards members.

The Vongole Sujebi (hand-torn noodles) first appeared on Culinary Class Wars and helped define Choi’s reputation as a chef who thrives on cross-cultural play.

At Bulgogi Syo, the sujebi arrives blackened with squid ink, swimming in a creamy clam broth with garlic and butter.

The noodles, torn by hand, are rustic and irregular, giving each bite a different chew.

The broth is briny and rich, silky with just enough creaminess to keep you sipping and your belly feeling warm.

On a side note, if you’ve watched “Bon Appetit, Your Majesty” (Episode 10), where the chef prepares a hearty sujebi broth, this dish reminds me of that French-inspired ‘Joseon restaurant’ creation.

Beyond these exclusive dishes, diners can also explore Bulgogi Syo’s Signature Hotstone Steak Cut series.

The appeal lies in control and creativity: you sear your own slices of premium beef to the doneness you prefer, then dip into sauces ranging from nutty sesame oil to fiery house-made gochujang.

Starting at $12.90, each set includes sotbap rice, fresh kimchi salad and soybean paste soup.

It is a complete value-for-money meal with theatre thrown in.
