Madam Leong Traditional Ban Mian at Amoy Street Food Centre offers more than just a bowl of noodles.
There’s a story of grit and determination behind this stall.
The business was set up when single-mum Vivian (Madam Leong) needed to find a way to support her family after hitting rock bottom.
Her daughter encouraged her to start selling her handmade Ban Mian, and that encouragement turned into a full-blown business.
So this is a stall with both heart and soul.
I’ve actually had it a few times before, both at its previous spot at Holland Close and now at Amoy Street.
Choices include Mee Hoon Kway ($5 onwards), Ban Mian ($5), Braised Pork with Black Fungus ($6), and their popular Dry Chilli Ban Mian ($5).
For noodles, you can choose from Mee Hoon Kway, Ban Mian, You Mian, Hor Fun, Yee Mee, or Thin Bee Hoon.
You can also tack on extras like such as braised pork ($2), sliced pork ($1.70), meatballs ($1) if you want to load up your bowl.
The Dry Chilli Ban Mian ($5) is what keeps regulars coming back – spicy, savoury, and possibly addictive.
The eggy Ban Mian came with an agreeable, almost al dente-like bite that it reminded me of pasta.
The noodles were coated in a savoury dark soy sauce, and came with minced pork, meatballs, crispy ikan billis and a soft egg (a pity as they used to include braised mushrooms long, long ago).
The sauce tasted like the typical sweet-savoury type similar to many stalls. But it was when the dry chilli part was mixed in when it lifted the overall taste.
The chilli had got heat and that unmistakable whiff of dried shrimp.
Reviews are mixed. Some people wish the soup was bolder. Others return for the dry chilli version and say it is worth the trip.
