There are already a number of Claypot Rice stalls at Chinatown Food Centre, such as the Bib Gourmand Lian He Ben Ji Claypot Rice, Claypot & Cooked Food Kitchen, and Guan Heng Claypot Chicken Rice.
Here’s one more.
There is a relatively new stall that serves traditional clay pot rice dishes with a modern twist.
Pot Master Canton Claypot Rice 煲师傅 老广煲仔饭 cooks clay pot rice dishes using an auto-rotating cooking system, aiming for evenly cooked rice with a consistent charred crust. Interesting.
Apparently, the stoves take up only 12 minutes to cook up the rice, compared to the relatively longer times (say 30 minutes to an hour) at the other stalls.
Their menu includes options of Preserved Meat Combo ($10), Chicken Mushroom ($6), Pork Ribs Black Bean Sauce ($6.50), Minced Pork Eggplant ($7), and a not-so-usual Braised Beef Brisket ($10) Claypot Rice.
Get the Master’s Four Treasure ($7) which is a hearty mix of various meats waxed sausage, bacon, chicken, and pork ribs.
The rice did arrive relatively fast, say after 15 minutes of ordering (I went during early dinner hours).
The meats were well-marinated, adding a robust flavour to the otherwise subdued rice.
The pork ribs were tender and easy to bite into as well.
However, the dish felt somewhat underwhelming without the dark soy sauce to enhance the overall mix.
For others expecting some form of rich, crispy crust, unfortunately, it mostly lacked the coveted texture, leaving only small portions of crunchy bits.
The inconsistency in achieving the much-loved guoba appears to be a shortfall of the automated system, which aims for a gentler crust.
I liked that this was relatively fast and affordable, and still a worthwhile stop for those curious about this fusion of old and new culinary techniques.
