[SEOUL] When I stood outside the entrance of FAGP 팩피 one year ago, I was turned away as it stated “100% strictly reservations only”.

So I made my way back a year later, confidently armed with a reservation. (Reservations can be made on Catchtable up to 15 days in advance.)

Helmed by Chef Lee Jong-hyuk, FAGP which stands for “Freaking Awesome Good Pasta” – a pasta joint in the trendy Seongsu-dong neighbourhood of Seoul.

The petite restaurant does not have any table seating. Instead, diners sit at a counter, leading to a culinary affair where one is inseparable from the food.

The pasta is handmade in-house using only the freshest ingredients, and the sauces are made from scratch daily.

It was enjoyable sitting at the counter that allowed for interaction with the chefs, and it was clear that the chefs at FAGP are passionate about pasta and take pride in every dish they serve.

Perhaps the most daring and surprising item of FAGP’s offerings is the Coconut Cream Spaghetti or “Cilantro Spaghetti” (26,000 Won), a dish that boldly headlines a herb often relegated to a garnish.

The incorporation of coconut milk and cilantro puree resulted in a pasta dish that married the aromatic intensity of cilantro with the creamy depth of the sauce.

I loved it, and I would actually think that even if you do not like cilantro that much, you may see it differently after having this pasta.

The Brown Butter Rigatoni (27,000 Won) was a dish that seemingly encapsulated the essence of the sea.

From the tender squid to the crunch of nuts, all enhanced by a smoky char from the torch-blown lemon zest, this had a good balance of textures and flavours.
