Dopo Teatro translates to “after theatre,” where one gets a sense of drama from the menu.

Take the restaurant’s signature pizza for example, which is like a well-rehearsed play. And the star of this culinary performance is the dough. Fermented for a minimum of 36 hours, the dough has a slightly sharp taste with a light and crispy disposition once baked.

Another showstopper is the Ika Sumi ($28). Its eye-catching black base, made using squid ink, contrasts beautifully with colourful toppings like squids, clams, prawns, and red cherry tomatoes. Moreover, using a pesto arrabbiata was a nice touch that helped balance the varying seafood flavours.
