If you are wondering why the French Crêperie is called “Madam Flod”, it began its life as a food boat in Sweden, and the name comes from a character in a Swedish book.

Another fun fact: The owner actually first operated on a physical boat called The Flod.

Now, Madam Flod is a French-style crêperie serving galettes which are savoury buckwheat pancakes, plus sweet crêpes.

Let’s start with the galettes, using gluten-free buckwheat flour imported from Brittany.

Each galette is intended for one person, with a gentle reminder printed on the menu that the French do not share.

Galettes include the Ham and Cheese Signature ($21) with cooked ham, Emmental, chèvre, salad, vinaigrette, butter-roasted walnuts, and honey, and Spinach ($18) with baby spinach and Emmental.

There are also the Beetroot ($21) with chèvre, walnuts, and honey, Roquefort ($23) with blue cheese, walnuts, and honey, and Salmon ($27) with smoked salmon, asparagus, and cream cheese sauce.

Just to name a few.

I ordered the Complète ($20) with runny egg yolk, cooked ham, Emmental cheese, salad, and vinaigrette, complete with a rustic, speckled appearance.

To me, the best part of a galette is the contrast in textures. The edges were surprisingly thin and yet had that satisfying snap (almost like a cracker).

The centre remained soft and slightly chewy.

Inside, the combination of emmental cheese, ham, and a sunny-side-up egg is a classic for a reason.

There was a specific joy in breaking the yolk, then coating everything with the salty ham and melted cheese.

So my tip is: take it all in one bite, close your eyes and enjoy the various textures.

For the sweets, the menu shifts to wheat flour, which results in a lighter and more golden crepe pancakes.

There are classics such as Sugar and Butter ($10), Sugar, Butter and Lemon ($11), Cinnamon and Butter ($11), Salted Caramel ($12), Chocolate Ganache ($12), and Coconut Ice Cream with Gula Melaka ($16).

Of course I had to go for the Singapore-exclusive Pandan Kaya Crêpe with whipped cream ($14).

The crêpe itself stayed thin and pliable, not cakey, with the pandan kaya adding sweetness and fragrance.

Even though I expected it to be on the much-sweeter side, it was manageable, also because the whipped cream helped soften the flavours.

The service at Madam Flod is professional too.

For anyone curious about proper galettes and crêpes, Madam Flod offers something that remains relatively hard to find in Singapore.
