Steak the Korean way comes alive at Bulgogi Syo, which brings Korean barbecue with a modern twist and dramatic flair.

Chef Chul Park, who also created SEORAE, introduced this three-step grilling method to ensure the meat gets an intense char while locking in flavour.

Each set arrives as a complete meal with your choice of mains, hearty serving of sotbap rice, fresh geotjeori salad, and a warming bowl of soybean paste soup.

This set combines a juicy Korean-style beef patty with a slab of thick cut gochujang-marinated pork loin.

The tteokgalbi (looking like a burger patty) has a soft bite, sweet-savoury with a touch of smokiness. The pork loin is tender, well-marinated, and carries the distinct depth of gochujang without being overwhelming.

I recommend pairing it with the Garlic Hangari sauce, which lifts the meat with a mellow, aromatic kick.

Stack your steak on sotbap, drizzle on sauce, add a little kimchi salad, and have it the way you like it. For just $19.90, this set feels like a steal.

Duroc Samgyeobsal Steak Pork Belly ($19.90)
Duroc pork is prized for its tenderness and marbling, and it shows. The pork belly arrives caramelised, glistening from the flambé finish, with edges crisp and a centre that melts in the mouth.

The meat is rich but not greasy.

You can try mixing or dipping it into Spicy Jeyuk sauce, which brings it to life with a hit of chilli and sweetness that never overpowers.

So Anchangsal Steak Hanging Tender ($29.90)
This thick-cut Black Angus hanging tender steak is juicy, beefy, and finished with a fiery flambé at your table.

The meat is robust, with marbling that stays moist even as the flames sear a smoky crust.

The Gochujang sauce, house-made, is sweet, salty, and a little tangy. The ideal pairing for this beef with character.

Chicken Sotbap ($12.90, $9.90 member price)
The Chicken Sotbap is Bulgogi Syo’s take on comforting Korean homestyle rice.

The dish features tender chicken, marinated and grilled, served with kimchi radish and spring onions over fluffy Korean white rice that arrives in a hot metal bowl to keep it warm.

The real way to enjoy it? Pour over a generous helping of sauce (like the Garlic Hangari sauce) which soaks into the chicken and rice.

Mix everything up, and take it bite by bite.

Tip: Keep some rice back for the end: add hot barley tea over the crispy nurungji to make a gentle, soothing porridge.
