There are MANY Fish Soup stalls at Amoy Street Food Centre, but two stalls are often compared by regulars and first-timers alike.

There is Han Kee known for its clean-tasting broth and efficient service, and Piao Ji for its flavourful soup and use of quality seafood.

I hear that Piao Ji has also changed hands after many years under the original founder Mr Yar Choon Phiow.

Due to health reasons, he listed the business for sale in late 2023. A new owner named Leslie has since taken over.

Early reports suggest he is keeping the core recipes and operations consistent, with only slight adjustments to service and opening hours.

At Piao Ji, the main draw is the Fish-and-Prawn Soup ($13, $16, $22).

The seafood used at Piao Ji is generally fresh. The prawns were plump and sweet, offering good texture.

Portions were moderate, not overly generous but not skimpy either.

I found the broth quite different from Han Kee’s, with fragrance from fried shallots and pork lard.

It was flavourful, though it felt slightly greasier than typical clear fish soups. The broth is Piao Ji’s star and perhaps its weakness.

You can also order the Fish Soup ($8, $11, $13, $16) on its own.

The slices of Spanish mackerel I had were firm and clean-tasting, though I noted that the slices could be on the thin side, might contain small bones, and some had a greyish tone.

Oh yah, the accompanying sauce is also a highlight.

You get a combination of chilli padi, minced garlic and a special sour taucheo dip that adds complexity to the dish without overpowering the natural sweetness of the fish.

Price is one of the most discussed aspects of Piao Ji. A bowl with both fish and prawns typically costs between $13 and $22. Rice is an extra charge.

For a hawker stall, this is at the upper end of the price range.

However, the stall continues to draw office workers and regulars who have developed a loyalty to the their style of Fish Soup.
