Tau Suan is one of those local desserts I enjoy growing up, though it is harder to find hawker stalls that specialises in that.

If you have always been looking for a good bowl Tau Suan, then make your way to Zheng Xing Desserts 正興甜品 (also known as the “famous Albert Centre Tau Suan”).

The original stall started at Albert Food Centre (near Bugis), but they have branched out to Beauty World Food Centre and Hong Lim Food Centre as well.

Zheng Xing Desserts specialises in four items – Tau Suan ($2), Bubur Terigu ($2), Pulut Hitam ($2) and Green Bean & Sago ($2).

Tau Suan is a traditional Chinese dessert made primarily from split mung beans, sugar, and water, thickened with starch to achieve that pleasant viscous texture.

It is harder to find that ‘perfect’ bowl nowadays, usually too thick and starchy, diluted, or too sweet.

Zheng Xing’s Tau Suan was one that has a thick consistency, yet not overly starchy.

The mung beans were soft, yet still had a good bite that was satisfying firm.

I noted that the you tiao (fried dough fritters) were fried on the spot, and therefore added a nice crunch without that foul-oily smell.

But to be really honest, that one dessert I loved most here… is actually the Green Bean & Sago.

Get the option to be thickened with coconut cream, and you get that creamy texture and soft green beans all in one spoonful. And not too sweet at all.

This is one of my favourite Green Bean Soup renditions in Singapore.

The dedication of its second-generation owner, Mingyi and his team, is evident in the preparation of these traditional desserts.
