Fatt Chicken 福鸡饭 in Bangkok is born out of Singaporean – Chef Enoch a noted personality in Bangkok’s culinary scene in recent years.

The brand is his brainchild, born out of a longing for the comforting dishes from his homeland during the pandemic.

In case you find his name familiar, he used to co-own the now-defunct Garcons in Singapore.

Chef Enoch joined the food scene in Bangkok in 2019 and quickly made his presence known, finishing semi-finalist in The Next Iron Chef Thailand Season 2 and finalist in Top Chef Thailand 2023.

Yes, he can speak fluent Thai now after a few years in Bangkok.

You can find Fatt Chicken at Central World Shopping Center (L3, B303), Mall Ngamwongwan (5th floor), True Digital Park West (1st floor), and EmSphere (G floor).

I visited the eatery at the brand-new and swanky EmSphere – a short walk from Phrom Phong BTS station.

The restaurant’s ambience is as straightforward as its menu, focusing on delivering quality Singapore-style food rather than an elaborate setting.

You can find Hainanese Poached Chicken Rice (THB 145), Hainanese Fried Chicken Rice (THB 145), Soy Sauce Chicken with Rice (THB 165), Bak Kut Teh (THB 280), and Kailan in Oyster Sauce (THB 175).

I had the Poached and Fried Chicken Combination (THB 290), accompanied with a trio of sauces – the signature Singapore Chicken Rice chilli, garlic and special Thai sauce.

The poached chicken was considerably tender and flavourful. But given the choice, my vote would go for the crispy and savoury Fried Chicken due to its crunchy-meets-juicy contrast with tasty marination.

Coming from the lenses of a Singaporean, I still wished the poached chicken was more succulent.

I liked the Thai jasmine rice as well – shorted grain that what you are familiar with. Chef Enoch used the smaller Thai garlic (whole with the skin) to be fried with chicken fats to be incorporated to the rice.

This makes the grains fluffy, slightly oily (just a tad), subtly infused with the essence of chicken and aromatics.

To complete the meal, there are other appetisers such as Mala Chilli Oil Shrimp Dumplings (THB 150), Szechuan Mouth-Watering Chicken (THB 235), Fried Wanton with Mala Mayonnaise (THB 150), Wanton in Dried Scallop (THB 210).

Surprisingly, I found the Dumplings not as spicy or vinegary as the ones I had back home, but still a worthy accompaniment to the mains.

Chef Enoch’s dedication to his craft and his heritage is evident, making it a must-visit for anyone in Bangkok craving authentic and heart-warming food.

Happy for him who is flying the Singapore culinary flag in a challenging foreign country, and doing it well, one step at a time.
