88 Hong Kong Roast Meat Specialist is well-known for their roasts such as Char Siew and Sio Bak – complete with crunchy crackling, moist meat and melt-in-your-mouth fats.
They have two outlets at Jalan Besar Singapore – an eatery at 308 Lavender Street, and a stall within a kopitiam at 153 Tyrwhitt Road.
According to 8 Days, they will soon open an outlet in the CBD at Far East Square during early-March.
This will be a 130-seater restaurant space with AIRCON.
Right now, the Char Siew is prepared within the Jalan Besar stalls.
Preparation involves laborious steps from braising the pork loin with a sweet malt sugar marinate, blow-drying, roasting to drenching the pieces over with dark gooey sauce.
I had the Roast Pork Rice which came with gloriously-beautiful pieces.
The pieces were both moist and full of bite, with a good layer of char (okay, maybe some parts could be too burnt).
Every plate of rice came with two types of chilli – one closer to the chicken rice type sauce, the other dry chilli with XO sauce included.
The Wanton Mee seemed to be done Malaysian-style with a dark, sticky sweet sauce as its base.
Some may feel that the sauce can be too rich or spicy, but I like the noodles doused this way. Very satisfying.
A roast meat gem found in Singapore; and good that it will open in the CBD with air-conditioning, making it more accessible for the office crowd.
