The brand YUN NANS specialises in Yunnan ethnic highland cuisines (高原料理). This type of cooking sources and uses fresh mountain ingredients from the Yunnan Province of China, where you can discover regional cooking nuances in China.
Their signature dish – the Steam Pot Chicken Soup, is prepared without even adding a drop of water. So apparently that is how uniquely brewed this steam pot is, using a pressure-steaming technique for three hours on a special breed of black-feet chicken. The water found in the soup comes from the condensation of the steam alone.
Prepared in a special hand-made Jianshui claypot, this dish rewards you with a clear, delicate soup with a robust and nourishing flavour. There are two individual portions provided in this National Day Set.
Also popular is its Crispy Duck with Dried Chillies. Made only from fresh duck, this spicy and fragrant dish uses specially hand-deboned duck meat.
Tender on the inside and with a crunchy exterior, the strips are stir-fried with two other special components – Yunnan-sourced broad beans which give the dish some crunch; and chillies from Yunnan’s Qiubei county.

This convenient platter for sharing features signature roasts of a quarter Roast Duck, Crispy Roast Pork, BBQ Char Siu, a quarter Soya Chicken, as well as a portion of marinated cucumber – spicy and sour with a fragrant hint of garlic.
Kam’s Roast’s signature Roast Duck known for its thin and golden-brown skin, follows the time-honoured recipe passed down from the founder of famous Hong Kong restaurant Yung Kee, prepared with a secret marinade.
As for the Soya Chicken, the special soya sauce is made using a blend of herbs including cinnamon, cloves, star anise, cardamom, licorice and bay leaves, which lends more depth of flavour to the succulent chicken.

White Restaurant is best known for pioneering the uniquely Singaporean dish – the Original White Beehoon. Did you know this dish was originally prepared as a homely dish by founder Mr Tay King Huak?
The Original White Beehoon is cooked with rice vermicelli in a rich chicken broth topped with prawns, squid, egg and veggies. Squeeze some fresh lime juice over it and add a dollop of sambal chili to intensify the flavours.
To celebrate the diversity of Singapore, they are offering a National Day set inspired by the four main racial groups of Singapore.

The Bijin Nabe’s power lies in its broth made from melted collagen. This protein helps rebuild dead cells to recreate a youthful, healthy glow, hence the moniker “beauty hotpot”.
Tsukada Nojo sources its collagen from the highly-prized ‘Jitokko’ chicken, the counterpart of Wagyu beef and kurobuta pork.
This pure white protein is transformed into a pudding, which is melted in the pot until it turns into a cloudy soup.
The closest thing to the fountain of youth, the Bijin Nabe is both a gustatory and visual delight. Dip the chicken into one of the sauces, from shoyu (light soy sauce), leek oil, yuzukosho (a citrusy Japanese spice), or chili layu sauce, to complete the experience right at home.
