For lovers of these delicious bivalves, Thursday may now be your favourite day of the week with the introduction of Oyster Thursdays at Cook & Brew at The Westin Singapore.
This is the newest addition to Cook & Brew’s themed nights, alongside Ladies Night on Wednesdays and FRIYAY on Fridays.
From March onwards, Oyster Thursdays will be featuring Fine de Claire Oysters freshly flown from France.
Cook & Brew gastro-bar is a popular venue to hang out for the working crowd in the vicinity, with its creative food offerings and extensive selection of craft beers, wines and cocktails.
Located on Level 33 of The Westin Singapore, it also boasts a splendid elevated view of downtown CBD and Marina Bay.
Diners can enjoy half a dozen Fine de Claire Oysters at $18++ or a dozen at $29++.
They come from Marenne-Oleron, the largest oyster-producing region globally.
What’s the difference between Fine de Claire Oysters and regular oysters – you may ask.
These have been the favourite oysters for those who prefer more succulent, juicier oysters with a balanced taste.
Their succulence is due to the finishing process, where they are fattened in the shallow waters of the claires basins (rectangular salt pools) for a minimum of one month.
This unique culturing process allows them to take on sweeter and fruitier flavours as well.
The Fine de Claire Oysters can be eaten in 4 different ways:
Firstly, you can squeeze some fresh lemon over them, which brings out the briny taste of the oysters.
Or add some mango mignonette (sauce mixed with minced shallots and vinegar) which is the typical French dressing for oysters, that balances out the salty brininess with a fruity mango taste.
If not, add some horseradish cream for an earthy, grassy bite which provides balance to the oysters’ natural flavour.
For the spice lover in need of some kick, the fiery Sriracha sauce should do the trick.
For some wine pairing, the Cloudy Bay Sauvignon Blanc 2017 from Marlborough, New Zealand is recommended with the Fine de Claire oysters.
One of the best known New Zealand wines, Cloudy Bay is the industry standard for Marlborough wineries.
The Sauvignon Blanc is known for its “crisp acidity which leads to a mouth-watering and persistent finish.”
Served in a glass at $18++ or as a bottle at $85++, the Cloudy Bay Sauvignon Blanc 2017 is a light and refreshing dry white, with a citrusy lemon and honey aroma, complete with lemongrass and stone fruit tasting notes.
The marriage of both refreshing Cloudy Bay Sauvignon Blanc 2017 and freshness of the Fine de Claire oysters brings about a more complete experience.
Other than Oyster Thursdays, look out for themed nights from Wednesday (Ladies Night), to Friday (FRIYAY).
Ladies get to enjoy free flow of featured cocktails every Wednesday.
Attractive deals such as house wines, beers, spirits and classic cocktails going at $10 nett, and a bucket of 5 Asahi beers for $40 nett on both Wednesday and Friday nights are also available.
