[Sydney, Australia] Not everyone can claim that they serve “The Best Scrambled Eggs In The World”. That sounds too far-fetched and overconfident, but Bills Granger probably can.

The art student turned self-taught cook and restaurateur, and now author and media personality is one of Australia’s best known Chef.

Some refer him as the Australian version of Jamie Oliver. Point to note: Having good looks for a chef is always an advantage.

I made my way to Surry Hills under the Adina Hotel on Crown Street for one reason. Okay, make that two.

Scrambled Eggs and Ricotta Pancakes.

The 3-hour wait did not stop me from having the scrambled eggs at Bills Omotesando Tokyo, and I thought I should try the Aussie version.

Quite unlike the Tokyo branch which is characterised by a very white décor and dozens of Japanese ladies having their brunches in small bites and tranquillity, bills at Surry Hill is vibrant and lively, added with a communal table running across the restaurant café.

The Full Aussie Plate (AUD$24.50) came with the signature scrambled organic eggs, sourdough toast, bacon, cumin roast tomato, miso mushrooms, pork and fennel sausage. The multitude of sides was exciting, but I didn’t care that much about them.

“This. Is. The. Best. Scrambled. Eggs. I. Have. Ever. Eaten.”

Okay, maybe I am exaggerating, but that was my thought the exact moment after stuffing my mouth with a spoonful of creaminess and happiness.

They were like fluffy soft (and milky) pieces of yellow clouds. If you know of any better than this, other than your mum’s cooking, let me know.

I was more indifferent to the Ricotta Hotcakes (AUD$20.00) with banana and honeycomb butter, though they were still deliciously-soft with a creamy centre.

Coffee lovers will be glad to know that bills uses an in-house blend by Single Origin Roasters. It is like the best of both worlds in one place.

By the way, I am still thinking about their scrambled eggs.
