Opus Bar & Grill at the Hilton Singapore is celebrating its 3rd birthday with the launch of a NEW Super Trio, which incorporates the best of the land, sea and soil.
That includes a 500g Australia Westholme Wagyu Sirloin (the land), Whole Live MSC Boston Lobster (the sea), and a Special Wine Package (the soil).

Known to be one of the best steakhouses in Singapore, Opus Bar & Grill is famed for its open grill concept with specially customised cabinets.
These are bespoke Himalayan salt tile ageing cabinets which are not commonly found in Singapore, which helps facilitate dry-aging of the meat to further tenderise while creating a more intense depth of flavour.
You may also notice blue and turquoise labels on the Opus menu.
These indicate that the seafood served is caught and farmed from a sustainable source, with certification awarded by the Marine Stewardship Council (MSC).
Australia Westholme Wagyu Sirloin
You may wonder what is so special about the “Australian Westholme Beef”.
It turns out to be a distinctive grass-fed and grain-finished Wagyu that you can start finding in some of the finest steakhouses.
Some background information: The Westholme beef is imported from Queenlands, and the herd first arrived to Australia from Japan over 20 years ago.
They are born in wild pristine outback stations, raised on pastures of Mitchell grass (supposedly free to roam around), and finished on proprietary grain blend.
This careful breeding is so to achieve the fine balance between rich marbling and lean.
After sharing the slab with a friend, we both agreed there was the right balance of elements – lasting juiciness with rounded, earthy flavours, especially the steak pieces cut towards the centre.
I say this would be great for those who like your steak on the lean side, yet not losing its succulence.
Whole Live MSC Boston Lobster
Nothing quite beats the sweet, firm, chunky pieces of Boston Lobster.
Interesting fact: One of the reasons why the Boston Lobster is prized over the other variants is due to its hard shells, that keeps the lobsters alive (and fresh) while being shipped.
The Boston Lobsters used at Opus are Marine Stewardship Council (MSC) certified, and it is the world’s most credible and recognized standard for environmentally sustainable wild-caught seafood.
The lobsters are cut live at the station, marinated in a specialty sauce, then grilled over the charcoal grill for that discount smoky flavour.
The flesh came of the shell that easily, and was chunky and freshly succulent. Do not forget about the meat in the claws, and I would suggest getting your hands dirty for those parts (especially to further lick the juices.)
It is served with a homemade creamy Harissa dip, which gives the dish unique Moroccan spiciness –goes well with both the steak and lobster.
Side Dishes Selection
Any good meal with the grilled meats is not complete with the sides.
There are 9 to choose from here – Arugula, vine tomatoes, shaved parmesan, Baby green salad; Portobello mushrooms; Grilled Green Asparagus; Smoked Risotto, leek, pecorino; Mac & Cheese; Broccoli; Garlic Mash Potato, and Truffle Fries.
The most popular sides are the Smoked Risotto, Mac & Cheese and wickedly-crispy Truffle Fries which were clearly addictive.
For some greens, get the crunchy Grilled Green Asparagus; and soft and tasty Portobello Mushrooms.
