Equilibrium – Italian Restaurant at Capitol Piazza Modern and Inventive
There are some openings that fall through the cracks, and you wonder why they do not get more limelight.
Equilibrium is one of them, a modern Italian restaurant at Capitol Piazza which has probably invested quite a good sum of money into the interior design, and time into creating its menu.
Opened by the same team behind Orchard Gateway’s Supply & Demand, this ‘Italian Bacaro & Ristorante’ is a more upmarket and adventurous version.
I am taking some time to focus on its dessert menu created by pastry chef Belinda Khoo, which is nothing quite like what you ever had before.
A wooden plate of cold cooked meats of sausage, salami, and pâté arrived on the table.
Wait, wait, wait… isn’t this supposed to be dessert?
Then you would realise the Deli Dolce ($21) ‘charcuterie’ plate is created of sweets – the prosciutto made of raspberry and green apple, salami was a piece of chocolate with pistachio, foie gras a slice of milk chocolate ice cream.
Psychologically as you put that piece into your mouth, it could feel very, very strange. Some components were weird tasting – there was savoury bacon jam somewhere.
Equilibrium’s Ota Goffa ($20) is a play of the classic Italian affogato. Instead of hot espresso and gelato, you get a reverse interpretation – hot gelato of vanilla bean and mascarpone cheese and cold espresso granite.
Taste wise, it was… interesting? I took a bite and went silent for a while. “What’s wrong?” Nothing. It was a matter of getting accustomed to, and the dessert overall needed some sweetness to balance the bitterness of the granite.
The Panna Cotta Nascosto ($14) was probably my favourite and the safest, a almond milk panna cotta with cocoa water jelly topped with blood orange granite. You get a mixture of wobbling pudding texture with icy granite in a single mouth. Playful and worked well together.
Equilibrium Modern Italian Bacaro & Ristorante can be the next restaurant to look out for.
